Frozen Sap Freezing Syrup Production - FOX CT

Sap is flowing slower than usual this maple syrup making season.

Actually this week, in Litchfield, production is frozen at the source.

Mark Harran, of Brookside Farm, said freezing temperatures, both at night and during the day, have stopped cold sap flow from maple trees.

Optimal temperatures, which farmers expect this time of year, should be around the mid-20s at night with highs around 40 during the day.

“I do go by the forecast and we could be frozen out until St. Patrick’s day,” Harran said.

Harran said last year was a great year for maple syrup production in Connecticut, he made almost 300 gallons worth.
